Spinach & Feta Tuna Patties

If I could describe my pantry in a few word during the beginning of quarantine, it would be LOTS of tuna. Now I'm not normally a huge tuna eater, so I started looking for ways to make all of these cans sound a little more appealing... That's when the idea of tuna patties came to mind! They are super easy and convenient to make in a short amount of time, which are two important factors to me when I'm thinking of what to make for dinner. Add them to a lettuce wrap or a hamburger bun and garnish with a little lemon and avocado. Hey look! You're now one step closer to demolishing that tuna can stack :)


Ingredients:

2 cans of tuna (5oz cans)

1/2 cup almond flour

2 tbsp yellow onion

2 tbsp chopped and sautéed spinach

2 tbsp parsley

1 egg

1/4 tsp of salt

1/2 tsp pepper


Instructions

  1. Combine all ingredients in a bowl and mix.

  2. Form into patties on a plate.

  3. Let the patties set in the fridge between 20-30 minutes.

  4. Cook the patties on the stove top in an oil coated pan at medium heat for one minute per side.
