POV: It’s a Saturday and you’re up early watching cartoons on the TV. You’re ready for breakfast and you smell Mom making cinnamon rolls. You head to the kitchen and smash 4 before heading upstairs to get ready for your sports game.
If this wasn’t you growing up, then I am so sorry…. I thrived on these types of mornings whether it was socially acceptable to have more than two rolls or not. There was no doubt it was going to be a good weekend when it started out like this.
Inspired by that childhood tradition, I present to you Cinnamon Roll Granola. It’s crunchy, it's got clusters, and it’s sweet. What more could you want?
Ingredients
1 cup of mixed nuts (I used ½ cups of walnuts, almonds, cashews, and pecans)
2 tbsp cinnamon
2 tbsp maple syrup
2 tbsp liquid coconut oil
1 tbsp coconut sugar
1 tbsp chia seeds
3 tbsp flaxseed meal
Instructions:
Preheat oven to 400°F.
Mix all ingredients together in a bowl then pour evenly on a baking sheet.
Bake in the oven between 12-15 minutes.
Let the granola cool on the sheet before storing or eating in order to get the ultimate clusters.
